Heard of Bubble and Squeak? What usually goes into mine: cabbage (red and/or green), Yukon Gold potatoes, onion and carrot. You really can't go wrong making Bubble and Squeak. Sausages are a nice compliment sauteed with the vegetables or served on the side. It's right up there with all the other comfort foods.
