May I share with you Romantic Homes magazine? You might think I am trying to sell you something all the time. But in reality I just want to pass on the "little gold mines" I have discovered.

I can't seem to find that perfect scone recipe. Perhaps you know of one which turns out crusty on the outside and tender on the inside? A scone recipe which is good served with clotted cream? There are a dozen to one recipes in books and on web-sites, but I don't have time for testing each one like in a chemistry lab.

Lillibeth can you help?

My recipe, which is close to Lillibeth's, is as close to simple perfection as it comes.

Sift together:
2 cups of flour
4 tablespoons sugar
2 teaspoons baking powder & 1/2 teaspoon salt

Grate in:
1/4 cup frozen real butter

When mixture resembles coarse crumbs, add:

3/4 cup milk

Stir until mixture forms a ball. Turn out onto lightly floured surface and knead 8-10 times. Pat out and cut in triangles or rounds. Bake at 400 degrees for 10-15 minutes, or until lightly browned. Serve warm with butter, jam, and clotted cream.

I was going to say, we just used the Anne of Green Gables cookbook recipe for ruby tea biscuits. If you don't overdo the mixing, and don't roll them out (just do the "pat in a circle" scone method), and if the weather is just right, they can turn out really fluffy inside, and crisp on the outside:) Mom just made a new hit with us... she put in white chocolate vanilla chips in the dough! She had to make a repeat batch to keep everyone quiet.

The chips mom used are called Guittard brand choc-au-lait vanilla milk chips.

Also, in my variation of the recipe Rebecca posted, we use olive oil instead of butter.

Amy, I just discovered a new recipe for scones in my roommate's recipe box. You have to try these; they're simply sublime!

Cranberry Orange Scones

Mix together:
3 cups flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Cut in:
3/4 cup butter

Mix in:
1 cup buttermilk
2 tablespoons orange juice

Add dried cranberries, blueberries, or poppyseeds. Flatten to 1/2 or 3/4 inch. Cut into 8 wedges. Bake at 350 for 20 minutes.

Make glaze from powedered sugar and orange juice and drizzle on scones while they're still warm. Yum!
